I decided to make a vegetarian week. I have been eating lots of greens, raw vegetables, and a wide variety of fruits, and honestly I feel great. Vegetables can actually change your mood. They can be used as a simple salad or as a gourmet dish.

This is a yucca puree with saffron flames, stuffed vegetables, roasted eggplant and onions and a few toasted pumpkin seeds.

Choose your vegetables well, wash them well and let your body tell you what to do with them. The consumption of organic food is good for you health and can also contribute to making a better world. If you can, grow your own.
