Comments Off on Beans and Greens and Rice: Bob’s Kitchen’s Simple Healthy Winter Meal
Cook a bunch of kale and one onion in lots of olive oil and garlic. In a separate pan, cook whole grain rice, drain and add 1/2 tin canned Italian spiced tomatoes (or used your favorite mix of spices).
Add one tin rinsed black beans and warm together. Add hot chili sauce and grated cheese of your choice. Serve on a eight inch plate with a hearty white, or any red wine.
This is nice no guilt vegetarian meal, full of protein and healthy fats, for a winter evening. Don’t tell anyone it’s vegetarian, they won’t notice.
