Here’s this week’s veggie cuisine: Rice With Seeds and Spices

Ingredients you will need:

5ml Sunflower Oil

2.5ml Ground Turmeric

6 Cardamom Pods, Lightly Crushed

1 Garlic Clove, Crushed

200g Basmati Rice

400ml Cups Vegetable Stock

115g Natural Yoghurt

15ml Toasted Sunflower Seeds

15ml Toasted Sesame Seeds

Salt & Freshly Ground Black Pepper

Coriander Leaves To Garnish

Method:

Heat the oil in a non-stick frying pan and fry the spices and garlic for about one minute, stirring the mixture all the time.

Add the rice and stock, bring to the boil and the cover. Simmer for 15 minutes, or until just tender.

Then stir in the yoghurt and the toasted sunflower and sesame seeds. Season with salt and pepper and serve hot. Garnish with the coriander leaves.
