The Aria’s Julian Serrano on the Strip

Comments Off on The Aria’s Julian Serrano on the Strip

I looked at Julian Serrano for an event in Las Vegas recently. The restaurant is located inside the relatively new Aria Hotel along the strip. Award-winning chef Julian Serrano stretches the boundaries of small plates and introduces guests to delectable interpretations of native Spain. He has cooked at Lucas-Carton in Paris, Hotel de France in Auch, Chez Max in Zurich and L’Aubergine in Munich.

Then onto America, where he held positions in Miami, Nashville, and San Francisco, where he opened Masa’s restaurant under the personal tutelage of the restaurant’s renowned founding chef, Masataka Kobayashi.

Signature dishes worth trying include his Lobster Pineapple Skewer with “molecular” rasberry wasabi, imported Spanish “Pata Negra” Ham, the Lobster, Chicken, Chorizo and vegetable saffron rice, the stuffed piquillo peppers with goat cheese and mushrooms and Gambas made with sauteed shrimp, natural jus and brandy. He also does a mean salmon with truffle bechamel and portabello mushrooms. And, if you’re looking to do a special event here, they have a reasonable $35 per person tapas menu, which gives you a wide range of options — vegetarian, seafood, meat and poultry. You can also drink Sangria for two hours (unlimited) for $25 per guest.
