A skier’s paradise, Alta Lodge offers ski-in/ski-out access to the mountain, beautiful views, morning yoga, in-room massages and relaxing hot tubs to soothe sore muscles. One lesser-known offering of the hotel, however, is an item that sometimes appears on their rotating menu: Kurobuta Pork Osso Buco.

Often referred to as Kurobuta Berkshire Pork, this 100% purebred Berkshire breed pork has been celebrated in Japan and around the world for many reasons, the main one being its marbling and flavor, which are its most distinctive characteristics. Its origins date back almost 300 years, when legend says the Berkshire hog was discovered by Oliver Cromwell’s army in winter quarters at Reading, the county seat in the shire of Berks in England. Fancied for its high quality, the Berkshire breed was refined in the early 1800s and has remained pure ever since. At Alta Lodge, Kurobuta Pork Osso Buco is braised and the process starts the day before the dish is served. Osso Buco is typically prepared with veal, but their Chef makes it with this special pork.
