I met Cake Flour founder and chef Claudia M. DeLatorre in Kentucky recently at their street festival table along a main drag where scrumptious chocolate was on display. Chocolate I sensed? How could I not have stopped by?
It turns out she is pals with someone I met two days before who couldn’t say enough positive things about their all natural ingredients and their nationally renowned flourless chocolate cake. It’s dark, rich and intense, made from 55% cocoa and glazed with a chocolate ganache for a more decadent experience.
They never use artificial dyes, flavorings or sweeteners, hydrogenated oils, refined sugar or flour, or preservatives that increase shelf life. Natural foods are foods that are minimally processed. Natural foods do not include ingredients such as refined sugars, refined flours, hydrogenated oils, artificial sweeteners, food colors, or flavorings. Examples of how they do this:
- Their flour is certified organic, unbleached and unbrominated (a process which is banned in many countries).
- Their sugar is certified organic and unbleached, leaving the beneficial minerals and nutrients intact without adding any harmful chemicals.
- Their eggs are produced locally from happy free-range chickens.
- They use European style butter which brings more flavor and less water into your favorite items.
- The shortening they use to make our delicious frosting is certified organic, not hydrogenated and made from natural sunflower and palm fruit oils.
- They use only the best European style chocolate made with 100% pure cocoa butter and 100% natural vanilla and absolutely no additives.
- Their seasonal specialties include a variety of all natural fruits and vegetables, including blueberries, raspberries, cranberries, lemons, oranges, carrots.
They also do a terrific banana truffle cake – Three layers of our banana cake filled and glazed with chocolate ganache and decorated with organic banana chips. Their sunshine cake is a tangy lemon chiffon cake filled with raspberry or strawberry preserves and frosted with a lemon buttercream. Cake Flour’s carrot cake includes layers of spice cake studded with carrots, raisins and walnuts, and frosted with a silky vanilla-bean cream cheese frosting.
Their Italian Rum Cake is a spice cake infused with rum with one layer filled with chocolate pastry crème and the other with vanilla pastry crème. The cake is refined with rum buttercream and sliced almonds. One last one worth mentioning is their opera cake, which is four delicate layers of chocolate cake separated by hazelnut chocolate butterdream, hazelnut ganache and a hint of coffee.
